Passionné par la mer et navigateur depuis sa plus tendre enfance, le chef rochelais est un fervent défenseur de la pêche durable et de la cuisine anti-gaspillage. Chaque matin, à la criée, le « cuisinier-pêcheur » choisit avec amour et minutie les plus beaux produits issus de la pêche locale : coquillages, crustacés et poissons de ligne avec une priorité, celle de respecter strictement les saisons de la mer, en excluant de sa carte les espèces menacées ou en période de reproduction. Christopher Coutanceau’s Relais & Châteaux restaurant offers a view of the entire bay of La Rochelle. The marine creations, the art of the table, the visual identity of the place tell the philosophy of the chef from La Rochelle, passionate about the ocean. A cuisine in osmosis with the marine seasons and a service orchestrated by Nicolas Brossard, who ensures excellence at every moment.
