En plus de la préoccupation environnementale, c’est aussi une véritable découverte gustative, en valorisant des poissons encore méconnus comme le merlan ou la vieille, des espèces fabuleuses.
Passionné par la mer et navigateur depuis sa plus tendre enfance, le chef rochelais est un fervent défenseur de la pêche durable et de la cuisine anti-gaspillage. Chaque matin, à la criée, le « cuisinier-pêcheur » choisit avec amour et minutie les plus beaux produits issus de la pêche locale : coquillages, crustacés et poissons de ligne avec une priorité, celle de respecter strictement les saisons de la mer, en excluant de sa carte les espèces menacées ou en période de reproduction.
